Situated inside the amazing Shangri-La Hotel in Paris, one of the
most renowned and celebrated hospitality designs in the world,
Shang Palace provides a fine-dining experience through the world
of Cantonese cuisine, with a menu that pays homage to China’s
full flavours and authenticity. In 2012, Shang Palace had the
honour of becoming the first Chinese restaurant in France to be
awarded a Michelin star.
Inspired by the Canton and Huaiyang regions’ culinary traditions,
the restaurant has become one of the most popular gourmet
destinations among tourists due to its ability to provide authentic
Chinese cuisine, prepared by the brilliant Chef Samuel Lee Sum,
whose main goal is to always challenge himself to improve his
already-phenomenal cooking. After spending six years as an
executive chef at top establishments in Tianjin and Kunshan, he
took on the challenge of becoming the head chef of one of the best
restaurants in the world.

Chef Lee Sum discovered a love for cooking through his mother’s
family. They introduced him to the subtleties of traditional
Chinese cuisine, which is a subject he can happily talk about all
day. In his dishes, there’s a stunning combination of colour and
ingredients that are complemented by the natural flavours of high-
quality seasonal produce.
When it comes to cuisine, the sautéed live rose lobster with crispy
shallots and the marinated foie gras and bean curd in Chaozhou
style are highly recommendable. In addition, the deep-fried squids
with pomelo and lemon peel and the poached chicken with Sichuan
chilli sauce are also excellent choices for a superb dinner that really
embodies the best out of Cantonese cuisine. The restaurant also
features a valuable list of fine wines, including the extraordinary
Puligny-Montrachet, which will certainly be the cherry on top of
the visit for any wine connoisseur.
