COVETED Magazine had the extraordinary opportunity to ex-
perience one of the finest dining venues in Chicago, the Acadia
Restaurant, owned and curated by Chef Ryan McCaskey. After
a lifelong dream of opening his own establishment, the tremen-
dously skilled chef created Acadia back in 2010. Since then, the
restaurant has become a respectable venue that has actually been
awarded a Michelin Star, just ten months after opening, and in
2015, it was honoured with another one.
Throughout his restaurant, Chef McCaskey pays reverence to
the serenity and abundance found across Maine, including sun-
dry of subtle nuances and refined details.
Furthermore, several of the products displayed on the restau-
rant’s tasting menus are prevenient from the Deer Isle area, spe-
cifically Penobscot Bay as well as besieging islands. Describing
his style as “simultaneously contemporary and classic,” the profi-
cient chef started his career with a classical and technique-driven
approach, but recently they switched focus to providing layering
flavours using contemporary techniques, however, he believes
that “one doesn’t overshadow the other – they work in harmony,
balancing out one another.”
Acadia features a contemporary menu that becomes even more
enticing with an extensive collection of cocktails, wine and bev-
erage pairings. The Yukon “risotto” with green apple, truffle and
fines herbs or the Stonington lobster with masaman curry and
Vietnamese herbs are undoubtedly a must try main dishes. By
virtue of such, it comes as unsurprising that Acadia excels in var-
ious areas, thus being a fine dining destination nestled in the up
and coming South Loop of Chicago.
In addition to the Michelin stars, the restaurant has also received
a 2012 Jean Banchet Best New Restaurant Award and Four Stars
by Chicago Tribune’s Dining Critic Phil Vettel in 2016.
