HÖST
COPENHAGEN, DENMARK
When you think about Copenhagen, your mind focuses on tour-
istic spots like Round Tour and Little Mermaid, as well as the
incredible Rosenberg Castle. However, this Nordic city isn’t all
about these locals, it’s also about authentic Nordic food. And
which better place than Höst to prove it?
This minimalistic restaurant can be found between Nørre
Farimagsgade and Ahlefeldtsgade, a quiet neighbourhood. When
you enter Höst, your attention is instantly drawn to the minimal
decoration. The discreet lighting and the brick walls report to a
rustic interior that reminds a countryside, respecting a straight
architecture. As a matter of fact, you will feel like you are inside
of a Nordic portrait. Comfort is achieved easily as the owners let
you attend freely without any social constraints or restrictions
of any kind. Simply, you feel at home.
But don’t be mistaken by this apparent simplicity: the restau-
rant has won already three international design awards due to its
original decor, which includes the world’s best-designed restau-
rant at the Restaurant & Bar Design Awards. These awards are
also result of the restaurant’s layout: you will be surprised to find
different spaces inside it with different purposes: the winter gar-
den hides beautiful trees and the open kitchen displays hanging
globe lights. This display in different stages also helps to turn it
more spacious, as well as the neutral colours that were chosen:
grey and white. Behind the design’s success is the collaboration
of Norm Architects, who used recycled wood on the ceiling, ta-
bles and toilets. Höst’s concept settles on the basic assumption
that new Nordic food should be available for everybody, from
Copenhagen citizens to tourists. Regarding the gastronomic con-
cept, Höst bases itself on traditional cooking mixed with a mod-
ern Nordic food. If there’s a key element for the success of Höst,
it is definitely the quality of the space and the food.
What about the delicacies? Either baked witch flounder with
asparagus, shrimp and roasted chicken skin or grilled pork neck
from Grambogaard with corn, cherries and pickled wood ear,
you will feel like all your five senses were awakened. For dessert,
choose a delicious rosehip ice cream with red and green straw-
berries. Nevertheless, don’t forget this detail: at Höst the menu
changes every month and a half and you can choose a menu of
three or five courses. Among people’s favourites, there are the
oysters, Norwegian lobsters and tenderloin.
And if you are a wine’s connaisseur you will not feel disappoint-
ed: try Grüner Veltliner Handcrafted, Martin & Anna Arndorfer,
Kremstal from Austria or Côtes de Rhône Villages, Château Saint
Jean, the Rhône from France. But if you can’t miss a good Italian
wine, go for Pacéncia Zibibbo, Tenute Orestiadi, from Sicily.
Definitely, Höst is a must-visit restaurant for Danish lovers.
