When we first entered Brace, we immediately understood that
our expectations would be surpassed. Although has only been
opened for a short amount of time, it is already making a culinary
statement in the Copenhagen foodie scene.
Starting from the welcoming: Ursula Waltemath received us
with such a cosy spirit that we almost forgot we were foreigners
from another country. In that moment, we felt that something
special would come up. And- trust me- we weren’t wrong.
She indicated a central seat and we thought that would be better
to be guided by her experience. After serving the first plate, she
explained to us that we were experiencing high-quality ingredi-
ents from Italy and the Nordic countries. We really enjoyed this
fusion: as a matter of fact, Brace is a result of a combination of
Italian cuisine and the Nordic kitchen. The explanation comes

easily: Nicola Fanetti, the Michelin-starred chef, is a natural lover
of Italy and all that concerns culinary concepts from the coun-
try. So, he added to this love some ingredients from the Nordic
cuisine, using always natural products. This concept is rare in
Copenhagen, so, the restaurant assisted to a fast recognition that
is already perceptible when we are talking about Copenhagen’s
finest restaurants. We were positively surprised with the dishes
that were authentic artworks. With its Italian touch, Nicola Fa-
netti creates modern culinary art at its finest form, always trying
to find out new inspirations for his original dishes. Classic plates
are reinterpreted with new culinary approaches which result in
authentic delicacies.
