REFRIGERATION, THE IMPORTANCE OF PRESERVATION
“Siamo quello che mangiamo” sosteneva già a metà del 1800 il filosofo tedesco Feuerbache
e alla luce degli studi più recenti e attendibili aveva ragione: la salute si costruisce a tavola
in base a quello che mangiamo. Un corretto stile alimentare è alla base del benessere
psico-fisico e com’è noto i benefici si ottengono consumando alimenti freschi e ben
conservati, che hanno mantenuto intatti i loro principi nutritivi e le loro qualità nutrizionali
e organolettiche. Cibi più freschi garantiscono un’alimentazione più sana. Da qui nasce
l’importanza di una corretta e ottimale conservazione degli alimenti, possibile grazie agli
strumenti di refrigerazione. Con la giusta temperatura e il corretto tasso di umidità, lontani
dal contatto con l’aria che ne provocherebbe l’ossidazione, gli alimenti si mantengono per
più tempo conservando intatti gusto, sapore e profumo. Gli strumenti di refrigerazione sono
quindi fondamentali alleati per garantire la migliore qualità di un alimento e offrire ad
ogni chef, professionista e non, i migliori ingredienti per le sue ricette, da cui ne trarrà
giovamento non solo il palato, ma anche il nostro benessere e la nostra salute.
“We are what we eat”: German philosopher Feuerbache made this statement in the mid-
nineteenth century. In light of more recent (and more reliable) studies, he was right: good
health is based on what we eat. Eating healthily is the foundation of physical and mental
wellbeing. We know the benefits that come from fresh food that has been well preserved,
which keeps the nutritional values, aromas and flavours intact. Fresher food ensures
a healthier diet, which explains why it’s important to preserve foodstuffs correctly with
refrigerators. At the right temperature and humidity, away from air, which could cause
the food to become oxidated, the aromas and flavours remain unchanged. Refrigeration
equipment is essential in guaranteeing the utmost quality of food and providing chefs and
home cooks with the finest ingredients for their recipes. All this is of paramount importance
for delicious dishes and, more importantly, for our wellbeing and health.
