In the \ncase of carrots, these include provitamin A, \nvitamin C, potassium and iron.\nTo keep fruit and vegetables fresh for as long as \npossible, they should only ever be washed just \nbefore eating them, otherwise they rot faster  \nand lose their natural taste. In the case of \ncarrots, for example, it is best to remove the \npackaging before storing them in the refrigerator. \nWith fruit, any bruised areas or damaged skin \nshould be cut off prior to storage. \nFruit and vegetables can also be frozen for up  \nto 15 months. To avoid freezer burn, always ensure that \nthe food is tightly wrapped in the packaging and \nthat this does not contain any air. If frozen when vacuum sealed, the \nshelf life is extended even further. The upper areas of the refrigerator are ideal \nfor open food, jarred food, sliced fruit and food that \nwill soon be eaten. The refrigerator door is perfect \nfor drinks, eggs, butter, jams, dressings and tubes. \nFrozen food, leftovers, ice cream and ice cubes are \nall at home at -18 °C in the BORA Freeze freezer. \nSpecial functions on the BORA refrigeration and \nfreezing systems such as Power Cool, Party and Eco \nenable special refrigeration and freezing conditions \nfor a set period.\nBut not all food has to be refrigerated. Mix together the toasted sesame seeds, \nlemon juice, tahini, wild garlic pesto and olive oil until creamy \nthen season with salt.\nPRO TIP\nFor the best flavour, use small to medium-sized carrots and \nleave some of their green tips to make them look nicer.\nTo make the dip \n2 tbsp sesame seeds\n1 lemon\n120 g tahini (sesame paste) \n40 g wild garlic pesto \n50 ml olive oil\nRock salt\nGinger, carrot and apple smoothie \nwith cayenne pepper and honey\nPrep. time: 15 min.  \nFor 2 portions\n150 g crushed ice\n250 g carrots\n50 g ginger\n220 g red apples\nJuice of 1 lemon\n1 tbsp extra virgin olive oil\n1 tbsp honey\n¼ tsp cayenne pepper\nCUT THE FRUIT \nFirst, thoroughly wash all fruit and vegetables. Next, peel the \ncarrots and ginger and cut into chunks. Core the apples (do \nnot peel) and cut into chunks too. Cut the lemon in half and \nsqueeze the juice.\nMIX THE SMOOTHIE \nStart by whizzing all of the hard ingredients in a blender,  \nthen add the liquids, spices and honey. Blend everything  \non the highest setting for 2 minutes until smooth. Divide  \nthe smoothie between 2 large glasses and garnish with  \na little cayenne pepper.\nMARINADE\nMix together the oil, paprika and salt in a bowl to make  \na marinade.\nVEGETABLE CRISPS\nSqueeze the lemon and mix the juice with the water. Peel the \nvegetables, chop them into thin slices (approx. 1 mm) and \nsoak briefly in the lemon water. Leave to strain then stir the \nvegetable slices into the marinade in a bowl. Spread out the \nvegetable slices on the universal tray and bake in the X BO \n(160 °C\u002F0% humidity) for 5 minutes. Then change the settings \nto 110 °C\u002F-100% humidity and dry the crisps for another  \n5 minutes. A lot of work goes on there, it gets  \ndirty and food is left lying around”, laughs the vintner. She \ncommissioned Elias Holocher to design the kitchen, which is \nseparated from the living room by an oak partition wall that is \ncoated in chalkboard paint and features a hatch. His greatest \nchallenge when doing so? “Adopting and continuing the \ndesign of the interior”, explains the kitchen designer. Elias \nand his team succeeded in combining functionality and the \npurist design. He did this by installing the BORA Professional \n2.0 modular cooktop extractor system with two gas cooktops \nand the BORA Tepan stainless steel grill, which fits perfectly \nin the cold-rolled stainless steel worktops and the large, \nbrushed stainless steel island. The large windows along both sides are \nperfect for following the course of the sun and watching the \nseasons as they change, as though you were stood in the \nmiddle of the vineyard: the leaves shimmer in lush green in \nsummer before turning beautiful shades of yellow, red and \norange in autumn. There are no pictures on the walls and no \nbrightly coloured interior design features to distract from \nthe spectacle. Designed using steel and an abundance of \nglass, the spacious structure draws nature indoors, virtually \nmerging the building and vineyard into one. \nWhen designing the building in cooperation with renowned \narchitect Thomas Hundt, Christin and Hans-Peter Wöhrwag \npictured clear shapes and an understated architectural piece \nin Bauhaus style. The winegrowing couple are the sixth-\ngeneration owners and managers of the family business \n‘Weingut Wöhrwag’ in Stuttgart-Untertürkheim. In 2018, they \ndecided to partially relocate the company due to a lack of \nspace and started work on the new building in 2019. In  \nspring 2022, the L-shaped building – which serves as both  \na warehouse for 200,000 wine bottles and the Wöhrwags’ \nhome – was completed. And it is not just the surrounding area \nthat is wonderfully green: the house is self-sufficient in terms \nof energy, fulfilling its needs through the use of PV systems, \ndeep and near-surface geothermal energy plus a heat pump. \nAll roof areas have been greenscaped, with the vineyard even \nextending to the bottle warehouse’s roof and a bee meadow \nblooming on the garage. \nAs a passionate amateur cook, Christin Wöhrwag felt it was \nparticularly important to have a practical kitchen.
