An organic restaurant serving mock tender, soupy
rice or stew pot? Why not, in the end being organic is
not synonymous with being vegan as well as eating
meat does not prevent from being sustainable
either. This is the starting point of the food shop and
restaurant Mama Campo, an initiative promoted by
Nacho Aparicio and David Yllera. “There is neither tofu
nor quinoa or rare seeds here”, Aparicio states, because
Mama Campo only sells local products and its kitchen
only produces typical Spanish dishes.
And so tradition and proximity are its two
fundamental premises, but there are some more
no less important. For example, there is the will to
change the widespread idea of “organic” to free it
from restrictions and make it accessible to everyone:
to those who keep the dictates of vegetarian religion,
to the inveterate carnivorous, to people suffering from
food intolerance or to those who are simply concerned
about having a balanced diet. Everyone is welcome in
Mama Campo.

concepto de
ecológico es
posible
¿Un restaurante ecológico que sirve carrillera de
cerdo, arroz meloso o puchero? Pues claro, porque ser
ecológico no es sinónimo de ser vegano ni consumir
carne impide ser sostenible. Este es el punto de partida
del colmado y restaurante Mama Campo, proyecto
impulsado por Nacho Aparicio y David Yllera. “Aquí no
hay tofu ni quínoa ni semillas raras”, afirma Aparicio
porque en Mama Campo se venden productos locales
y se cocinan platos típicos de la gastronomía española.
Tradición y proximidad son, pues, sus dos premisas
fundamentales. Pero hay algunas más y no menos
importantes. Por ejemplo, la voluntad de cambiar el
concepto “ecológico”, tal y como lo conocemos, para
liberarlo de restricciones y ponerlo al alcance de la
mayoría. Porque en Mama Campo son bienvenidos
desde los que observan la religión vegetariana
hasta los carnívoros empedernidos, sin olvidar a los
que sufren intolerancias alimentarias ni a los que
simplemente se preocupan por llevar una dieta
equilibrada.
