Und wie reagieren eure Gäste?
G: Das Schönste ist doch, wenn der Gast bei uns die Zeit
vergisst. Dazu, da bin ich überzeugt, braucht es alles:
gutes Essen, perfekten Service, angenehmes Ambiente.
C: Manche wollen gar nicht mehr gehen. Das ist das, was
Silvio hier bietet und ich bei mir: Man kann unsere Räume
erleben, man verbringt Zeit mit uns.
Und wieso gehört dazu de Sede?
C: Wir schauten mit unseren Interiordesignern verschie-
dene Möbel an; als Silvio und ich das DS-707 sahen,
sagten wir beide: Hey, das ist es! Wir waren knapp in der
Zeit, brauchten das Sofa innert vier Wochen und so
suchte ich den direkten Weg, ging auf die Website von
de Sede, um zu schauen, wer der CEO ist, und so rief ich
Monika Walser an. Monika hatte Freude und sagte uns,
dass sie das schaffen, das machte uns total happy. Wir
haben dann noch ein bisschen mit den Materialien hin
und her gespielt, überlegten zuerst auch, ob ein Stoff-
bezug nicht besser gewesen wäre. Zum Glück konnten
sie das nicht rechtzeitig liefern – denn, dieses schöne
Leder ist irgendwie zeitloser. Nun sind wir megastolz –
es ist für uns ein klares Statement.
Man deklariert Qualität?
C: Man deklariert, dass man affin ist auf Design, auf Quali-
tät und auch auf eine gewisse Historie. de Sede gibt es ja
schon lange, und auch dieses Sofa ist ein Klassiker und
passt perfekt zu uns: Wir stehen für gelebten Luxus.
Irrtum, Andreas, das ist ein neues Modell!
C: Was, das ist ein neues Modell?
Ja, das ist das DS-707, das der Designer Philippe Ma-
louin im Auftrag und mit de Sede entwickelt hat. Aber es
ist schön, dass du das gleich den Klassikern, den Ikonen
von de Sede zuordnest.
C: Das Sofa steht aber absolut für de Sede. Es hat diesen
unverkennbaren Stil und die Art und Weise, wie die Manu-
faktur de Sede Leder verarbeitet.

C: Exakt, das ist das, was wir vor 20 Jahren auf Schloss
Schauenstein angefangen haben. Dabei haben uns ganz
viele Menschen – Mitarbeitende wie Gäste – unterstützt
und diese beiden Orte zu dem gemacht, was sie jetzt
sind. Silvio hat nun hier sein eigenes Projekt, geht seinen
eigenen Weg; das ist megaschön zu sehen – und viel
mehr als nur ein Rezept oder ein Gericht.
How do your guests react?
G: The best thing is when our guests just let time slip by.
For that to happen, I’m convinced that everything comes
into play: good food, perfect service, a pleasant atmosphere.
C: Many of them don’t want to go home. That’s what
Silvio offers here and what I offer at my restaurant: they
can experience life inside our walls, spend time with us.
What part does de Sede play in all of this?
C: Together with our interior designers, we looked at
different furniture. When Silvio and I saw the DS-707,
we both said: “Hey, that’s the one!” We were on a tight
schedule, needed the sofa within four weeks and so were
looking to cut out the middleman. I went on the de Sede
website to see who the CEO was and that’s how I ended
up calling Monika Walser. Monika was happy to hear from
us and said that they could do it. We were over the moon.
We then went back and forth trying to decide on the
materials; at first, we wondered whether fabric upholstery
might be better. Luckily, they weren’t able to deliver that in
time, because this beautiful leather is more timeless in a
way. Now we’re really pleased with our choice – it makes
a clear statement for us.
Is quality something you declare?
C: We can declare that we’re discerning in terms of de-
sign, quality, and, to a certain extent, history. de Sede has
been around for a long time, and this sofa too is a classic
and a perfect fit for us: we stand for real-life luxury.
Actually, Andreas, that’s a new model!
C: What?! It’s a new model?
Yes, it’s the DS-707 that the designer Philippe Malouin
was commissioned to develop with de Sede. But it’s nice
that you’ve associated it with the classics, the de Sede
icons.
C: But the sofa is the epitome of de Sede. The style and
the way in which the manufacturing company de Sede
works the leather are unmistakable.

C: Exactly, that’s what we started 20 years ago at Schloss
Schauenstein. Many people supported us – both em-
ployees and guests – and made the two locations what
they are today. Silvio now has his own project here and
is going his own way; that’s really great to see, and it’s
much more than just a recipe or a dish.
