Spitzenkoch Andreas Caminada führt «Schloss Schauen-
stein» in Fürstenau (GR), das regelmässig auf der Liste
der weltbesten Restaurants erscheint; sein Partner Silvio
Germann, Koch des Jahres 2024, führt das Landschloss
«Mammertsberg» in Freidorf (TG). In beiden Toprestaurants
stehen Skulpturen von de Sede – bestes Beispiel für das
Credo des gastronomischen Duos: «Wir stehen für ge-
lebten Luxus.»
Andreas, Silvio – wir sitzen hier hoch über dem Bodensee
im wunderbaren Landschloss Mammertsberg. Ist es euch
bequem?
Silvio Germann (G): Absolut!
Andreas Caminada (C): Es ist ein grossartiges Sofa, auf
dem wir sitzen!
In Fürstenau wie hier in Mammertsberg spielen neben
Fine Dining auch Behaglichkeit und Bequemlichkeit eine
wichtige Rolle.
C: Wenn man etwas Gutes schön auf einen Teller bringen
will, dann hat man einen gewissen ästhetischen An-
spruch. Wir denken über den Tellerrand hinaus, es geht
um ein Gesamterlebnis.
G: Ich bin in allem, was ich mache, ein grosser Ästhet.
Darum ist auch das Interieur in unseren Häusern wichtig.
C: Man hat einfach sein ganzes Leben ganz viel Spass an
einer solchen Skulptur und das Möbel wertet das ganze
Lokal auf. Ich muss ja nicht Werbung machen für euch,
aber diese Sitzlandschaft macht einfach richtig Freude.
Top chef Andreas Caminada runs “Schloss Schauenstein”
in Fürstenau (Graubünden), which regularly appears on
the list of the best restaurants in the world; his partner
Silvio Germann, Chef of the Year 2024, runs the country
chateau “Mammertsberg” in Freidorf (Thurgau). Both of
these top restaurants in Switzerland feature sculptures
by de Sede – a prime example of the gastronomic duo’s
credo: “We stand for real-life luxury.”
Andreas, Silvio, we’re sitting here high up above Lake
Constance in the wonderful Mammertsberg country
chateau. Are you sitting comfortably?
Silvio Germann (G): Absolutely!
Andreas Caminada (C): It’s a great sofa we’re sitting on!
Both in Fürstenau and here in Mammertsberg, comfort
and coziness play an important role alongside fine dining.
C: When you want to serve up something good on a plate
and make it look nice, it means you have certain demands
in terms of esthetics. We think beyond the plate; the who-
le experience matters.
G: I’m a great believer in esthetics in everything that I
do. That’s why the interior design is also important in our
companies.
C: Such a sculpture brings enjoyment for a lifetime and
the furniture enhances the entire venue. You don’t need
me to give you any publicity, but this seating is simply
delightful.
