PORTE 12
PARIS, FRANCE
It is in the Rue des Messageries that we find the oriental influenced
restaurant Porte 12, in the tenth district, located near the metro
Poissonière. Exactly because it is outside the chic Parisian area, the
chef Vincent Crepel, under master André Chiang’s directions, de-
cided to choose this atypical location.
“We intended to escape from the center and look for a cozier and
disconnected place from the central Parisian restaurant area”, ex-
plains Crepel. Reactivating what was once a textile and lingerie
atelier, Porte 12 has been created in harmony within the funda-
mentals of its predecessors – the marvelous artistry works of one’s
pair of hands and ceaseless interminable inspirations - merged in a
blend of contemporary and old, creativity and simplicity. It is im-
possible not to be enchanted by the oriental influences that guide
the genesis of Porte 12 restaurant: from the diner starters to the
final dish everything evokes the Asian flavors. A pure experience
conceived on an honest and yet imaginative journey.
The Chef Vincent Crepel is a French native who spent much of
his childhood and formation years in the region of Midi Pyrénées
and along the shores of the French Atlantic Ocean. He expanded
his culinary knowledge notably under the wings of Chefs Philippe
Rochat and Benoît Violier of the famous Hotel de Ville Crissier in
Switzerland and Chef André Chiang of the eponymous Restaurant
André in Singapore. Crepel has developed his knowledge in cuisine
through its travels between Europe and Asia.
His influences are vast. “I have changed the way I see cuisine, I
could quote, Benoit Violier, André Chiang, Philippe Rochat, Juan
Mari Arzak”, he adds.
“I express myself by signing a cuisine of author rooted in the mo-
dernity, but which does not forget its original roots”, note. As the
product dictates his delicacies, he only sublimates it.
